Pull-Apart Pizza Bites

I found this great recipe on Pinterest for pull apart cheese bites.  You use pizza dough and wrap it around a piece of string cheese.  I don't usually have refrigerated pizza dough, so I used the recipe out of the book How to Cook Everything . My kids eat all the string cheese so I cut a block of mozzarella into little cubes.  I went one step further and wrapped a couple of pieces of pepperoni in with it too. Then you brush some egg wash over it.  Bake at 450 for about 25 minutes or until it looks like this picture.  Then in some melted butter I added some parmesan, Italian Seasoning and Garlic Salt.  When they are done cooking you brush the butter mixture over the top.  You can dip them in some marinara (pasta) sauce premade.  Or I resorted to using a can of tomato sauce, some garlic salt, and Italian Seasoning again. Sunny Day

It was a cold day to start.  With about a -1 degree F.  But it was sunny for the first time in a while.    I promised my Oldest that we would make some cookies after making some with my middle child. So after he got home from school we got to making the chocolate chip cookie recipe on the Hershey's bag of semi-sweet chocolate chips.   Notice the difference?  I had a mentor that taught me to put a couple of test cookies on the pan first.  The bottom cookie is one of the first ones.  The top cookie is how I prefer chocolate chip cookies.  Sometimes it takes a bit more flour, but it turns out a lot better.  Test cookies.  

Doing Some Cooking

The weather here has still been off and on snowing and blowing.  Last Friday, they closed down hubby's route to work due to an avalanche.  He had to make up the work on Saturday.  So it has been a long and crazy week for him. The Oldest had a four day weekend because of President's Day.  So it feels like it should be Friday for me today. I usually cook a lot of different things, but lately I'm documenting it more for this blog.  Here goes: We had some blueberries that were starting to go bad.  So I made some Blueberry Cheesecake.  Usually, I prefer the no-bake kind, but this recipe was so easy and tasted really good, that I might just do it this way from now on. Cooking the blueberries to make sauce. I don't have a cheesecake pan, so I used pie plates. We recently bought an air fryer so I have been trying out recipes for it. Repair Job

We are feeling quite a bit better around here.  A few sniffles left, and hubby caught the sore throat, but the rest of us are well. We are having a lot of weather again.  Today, I shoveled about 6 inches of snow with big drifts in a lot of areas.  Right now it is raining.  On top of snow, that is just nasty.  Most likely it will freeze and become a big, icy mess.  We are expecting avalanches tonight along hubby's route to work.  So it is going to be interesting in the morning to see what happens.  He leaves super early. Before the plows are usually out.  Maybe the highway department will be proactive.  I don't know. Tuesday I had a Dr. appointment late in the afternoon an hour away from home.  I had my dad drive me.  So while I was waiting I did some repair work on one of my gloves that was falling apart.  It is a knit glove with leather stitched on to the palm and fingers.  This was a pain to work on. It has been a Monday for sure.  To start with the three kids were coughing through the night. The middle was doing much better than he was compared to the last week and a half. A week ago Friday he was sledding and ran head on into a T-post. I heard the commotion before he got into the house.  When he got into the house he had blood streaming down his face and quite a hole in his forehead.  With applied pressure, the bleeding stopped almost immediately.  We called Papa over to consult on whether a trip to the ER was in order, but we concluded that it was not.  Head wounds are notorious bleeders, but not generally life threatening.  He's up to date on his tetanus.  Later that afternoon he was at it again.  Going down on the sled head first.  I took him in to school last Monday (this is when the cough started to emerge). This way I could explain to the teachers about the bandage on his head.      The youngest fought sleeping...
