Pull-Apart Pizza Bites
I found this great recipe on Pinterest for pull apart cheese bites. You use pizza dough and wrap it around a piece of string cheese. I don't usually have refrigerated pizza dough, so I used the recipe out of the book How to Cook Everything. My kids eat all the string cheese so I cut a block of mozzarella into little cubes. I went one step further and wrapped a couple of pieces of pepperoni in with it too. Then you brush some egg wash over it. Bake at 450 for about 25 minutes or until it looks like this picture. Then in some melted butter I added some parmesan, Italian Seasoning and Garlic Salt. When they are done cooking you brush the butter mixture over the top. You can dip them in some marinara (pasta) sauce premade. Or I resorted to using a can of tomato sauce, some garlic salt, and Italian Seasoning again.
We all came down with a nasty bug. So we are trying to rest and get our fluids. First it was the Oldest and me on Sunday. Then yesterday afterschool the Middle came down with the fever. Then early this morning the Youngest had it. Hubby has a sore throat. Hopefully, he doesn't get any worse than that. Yesterday he came home from work with a cut at his hairline. He didn't tell me exactly how it happened, but he's had something similar happen and knows I hate it when he doesn't call me first and warn me something happened.
On Sunday, we also lost a dear family friend who has been battling brain cancer for a very long time. We won't be able to go to his funeral which is kind of sad. With the three little kids and most of us sick, it would be a nightmare. So we are kind of trudging through this week. I'm just trying to make sure that the house doesn't fall into utter disaster. It's gets there mind-bogglingly fast when Mom is out for the count.
