Doing Some Cooking
The weather here has still been off and on snowing and blowing. Last Friday, they closed down hubby's route to work due to an avalanche. He had to make up the work on Saturday. So it has been a long and crazy week for him.
The Oldest had a four day weekend because of President's Day. So it feels like it should be Friday for me today.
I usually cook a lot of different things, but lately I'm documenting it more for this blog. Here goes:
We had some blueberries that were starting to go bad. So I made some Blueberry Cheesecake. Usually, I prefer the no-bake kind, but this recipe was so easy and tasted really good, that I might just do it this way from now on.
My oldest and middle child like a cornflake crumb breading, so that's what I have in the bowl on the right with various herbs and spices. The bowl on the left is buttermilk, since I had some. I have also dunked them in mayo. Usually I do smaller pieces for popcorn chicken.

I don't have a cheesecake pan, so I used pie plates.
We recently bought an air fryer so I have been trying out recipes for it. Here we have the makings of chicken tenders. Chicken coated with flour.
Before putting them in the fryer, I had to spray them with a little cooking spray to get them brown and crispy. Still better than deep frying. It takes about 16-20 minutes.
Today, I tried homemade French Fries. Peeled and cut the potatoes and everything. My first batch was awful, even though I followed the directions and soaked the cut-up potatoes in water for 30 minutes. Today, I soaked them. I rinsed them and patted them dry with a paper towel. Then I tossed them in a little vegetable oil. Huge difference from the first batch. Nice and crispy and beautiful. Served with a little cup of pink/fry sauce and my middle child ate them like crazy. Not going to save me much time because I have to soak them, but it will save a lot of money when a bag of frozen fries costs a lot more than a bag of raw potatoes.
My middle child and I also made rolled sugar cookies. He saw the heart-shaped cutters and wanted some Valentine's cookies. I halved the recipe so it only made about 12 large cookies. After being slathered with pink frosting, he was a happy camper. I swear I was feeding this kid all day today and he still said he was hungry. Must be going through a growth spurt.
